It is the great unknown of the Galician traditional preserve. This seasonal fish is captured in the Bay of Biscay during the months of September, October and November. In factory, sauries are selected and prepared by hand, first roasted them steamed and then cutting them and canning them by hand before covering them in olive oil.
Are perfect as a main ingredient in sandwiches and salads, as well as being very healthy for its high content of calcium, phosphorus and omega 3.
